Cranberry Apple Rhubarb Crisp

Cranberry Apple Rhubarb Crisp

Topping
1/3 cup lightly packed brown sugar

1/3 cup oats

3 Tbsp whole-wheat flour

1 tsp cinnamon

2 Tsp margarine, melted

Combine all topping ingredients, mix well and set aside.


2/3 cup sugar

3 Tbsp flour

Rind of 1 orange, grated

2 cups sliced apples

2 cups diced rhubarb

1 cup cranberries

Combine sugar, flour and grated orange rind. Add fruits and toss to coat thoroughly with dry ingredients. Spoon into an 8 cup baking dish and sprinkle evenly with topping.

Bake at 375 degrees for 40-50 minutes, or until fruit is tender.

Serve warm or at room temperature.
